We all like to be prepared… but sometimes we aren’t.
That’s why I created this collection of 10 easy, quick, and healthy plant-based recipes you can pull together in just a few minutes using pantry ingredients and whatever vegetables you have left in the produce drawer, or frozen veggies!
These recipes are all fully plant-based and practically whole foods… except for one thing: grains. It’s very difficult to cook whole, intact grains from scratch in less than 20 minutes. Instead, I recommend reasonably-healthy-if-imperfect alternatives such as pasta, Asian-style noodles, couscous, and white rice. If you have extra time, then I warmly recommend cooking some whole grains instead. Of course, it’s even better if you can always have some in the freezer, just waiting to be thawed to accompany your meal.
The plan includes a list of pantry items, robust vegetables, and durable refrigerated or frozen foods that I recommend keeping at hand at all times, for those weeks when you aren’t prepared to cook more elaborate meals.
