You are registering for a LIVE version of the course redesigned for those cooking for one.

  • The batch cooking videos have been recorded already and you will have the option of watching them in a live watch party with Brigitte.
  • There will be multiple facilitated opportunities for connection and community-building with others who, like you, cook for one.
  • The content of the course is pared down to focus on the simplest batch cooking sessions. You don’t need a 2-hour batch cooking session so we won’t spend time on that!

What’s in the “Cooking for One” version of the course?

  • 2 cook-along sessions including detailed handouts with the recipes and descriptions of what I am doing
  • Basic skill videos about making soups, stews, stir-fries, salads and bowls, and cooking whole grains
  • Nutrition fundamentals so you can compose healthy and nutritious meals
  • Printables you can tape to the inside of your kitchen cabinets for quick reference including basic recipes, nutrition reminders, and flavor profiles
  • 2 interactive workshops to share strategies with your fellow solo cooks

When is it happening?

Orientation starts on April 10th, 2025.

The watch parties and facilitated workshops will be on Wednesdays at 11 a.m. Pacific time, from April 16th to May 14th.

You will have access to the “Cooking for One” version of the course for a minimum of 12 months.

Frequently asked questions

Do I need to attend all sessions live?
No! You can watch all the videos on your own.

What do you mean by “healthy vegan”?
In the Vegan Family Kitchen, all food comes from plants – or mushrooms, which technically aren’t plants! A variety of vegetables, beans, whole grains, nuts, seeds, herbs, and spices are part of every meal. Most ingredients are straight-up whole foods. Minimally processed ingredients such as noodles, tofu, and soy sauce are used. Though I have nothing against occasionally using some ready-made vegan meat products, they aren’t included in this course.

I want to cook with no salt, no oil, and no sugar. Is this course for me?
Salt, oil, and sugar are always optional in the Vegan Family Kitchen.

Will there be gluten-free options?
Everything I teach can be done with or without gluten, and I’ll point out suitable substitutions as we go.

Am I expected to cook at the same time as you during the live batch cooking sessions? 
No! You can watch the whole cook-along from the comfort of your couch first, then do it again in the kitchen, cooking along.

How much time should I commit to the course?
One to two hours per week on average over the course of 5 weeks, plus your normal cooking time to practice.

Do I need any special tech?
The calls will be on Zoom. It’s better to use a bigger screen (tablet or computer) as opposed to a phone so you can see other course participants. Other than that, the online course platform works great with the Google Chrome browser (and probably others, too).

How does this compare to the regular version of Plan, Prep, and Relax?
The full course has four cook-along sessions instead of 2, and includes a 1-on-1 coaching call with me.

How does this course compare with the Vegan Kitchen’s existing course, The 5,000-Meal Solution?
The 5,000-Meal Solution is all about strategies and touches on nutrition, however it has no cooking component at all. It was also recorded in 2017, and I have learned a ton since then about cooking, nutrition, and making engaging course material! Plan, Prep, and Relax will include short videos about plant-based nutrition and cooking skills, in addition to the four core cook-along batch cooking videos. Framing this way of working the kitchen as “cascade cooking” is also new and will help you get into the meal flow zone with more ease and less effort.

When you say “beginners,” what do you mean? 
The audience I have in mind for this course is people who are new to plant-based eating or batch cooking, or both. There are no pre-requisites other than a willingness to learn and practice. Those who are beginners at neither, but who have been relying on precise recipes for cooking, will also greatly benefit from this program.

I’m intrigued about the idea of cascade cooking. What’s that?
Cascade cooking is the practice of using limited batch cooking time on the weekend to create a “pool” of selected building blocks. Those building blocks “cascade down” to form the base of weeknights meals, in combination with other elements that you cook or assemble in 15-30 minutes MAX at meal time. Some of those meal-time elements then also continue down the “cascade” to get repurposed into different meals later in the week, and so  on and so forth… until the fridge is empty and it’s time to batch cook again!

(Though you should always have something in the freezer for emergencies.)

In Plan, Prep, and Relax, you’ll practice cascade cooking with a set of building blocks that will grow from very simple to more complex.

Then, you’ll learn to customize your batch cooking sessions to suit your needs and preferences.
